White Truffle Pasta

White truffles call for simple recipes that highlight the rich umami flavor. A sprinkle of White Truffle Salt in this pasta will make you feel like you're dining at a Michelin-star restaurant in the comfort of your home.

Method

  1. In a medium pot, bring salted water to a boil and cook the pasta according to the package directions. Reserve about a cup of the pasta water before draining.

  2. Drain the pasta and set aside, drizzling and tossing with 1 tablespoon of olive oil so it doesn't stick together.

  3. In a large skillet over medium heat, melt 2 tablespoons of butter. Add the cracked black pepper and cook about a minute, until toasted.

  4. Add about ½ cup of the reserved pasta water to the skillet and bring to a simmer. Add the pasta and the rest of the butter, reduce the heat to low, and add the Parmesan. Stir and toss with tongs until the cheese melts.

  5. Remove the pan from heat and add the pecorino (or more Parmesan if you aren't using pecorino). Stir until melted and the sauce fully coats the pasta.

  6. Plate the pasta and season with White Truffle Salt to taste.

  7. Enjoy!
