White Truffle Pasta

Ingredients
- 8 oz organic spaghetti or any noodle you would like
- 1 cup reserved pasta water, divided
- 1 tablespoon olive oil
- 3 tablespoons organic butter, divided
- 1/2 teaspoon ground black pepper
- 1 cup shredded organic Parmesan cheese
- â…“ cup shredded pecorino cheese (optional)
- SydSalt Blanc White Truffle Seasoning Salt

Directions
- In a medium pot, bring salted water to a boil and cook the pasta according to the directions. Reserve about a cup of water.
- Drain the pasta and set aside for now drizzling and tossing with 1tbs of olive oil so it doesn’t stick together.
- In a large skillet over medium heat, melt two tablespoons of butter. Add cracked black pepper and cook for about a minute until toasted.
- Add about ½ cup reserved pasta water to the skillet and bring it to a simmer. Add the pasta and the rest of the butter. Reduce the heat to low and add the parmesan. Stir and toss with tongs until the cheese has melted.
- Remove the pan from heat and add the pecorino or more parm if you aren’t using pecorino. Stir until the cheese has melted and the sauce coats the pasta fully.
- Plate the pasta and season with SydSalt Blanc White Truffle Seasoning Salt to taste.
